Cocoa Cookie Sticks

Cocoa cookie sticks are an easy-to-make, grown up, indulgent treat. Have a look at the “Top with Cinnamon” blog to see the simple recipe. The recipe uses a bittersweet gluten-free dark chocolate cookie dough for the peanut butter and pretzel cookie sticks. The blog describes the cookie dough as baking to a crispy texture with the addition of the crumbly peanut butter topping but becoming a soft, chewy chocolate cookie when encased in chocolate for the mint and pistachio version. Either way, I think they would be great teamed with an espresso for an afternoon pick-me-up!
